1 large loaf round San Francisco sourdough bread

4-6 eggs

1-2 Tablespoons ½ & ½

1 cup cubed or sliced potatoes

1 small onion chopped

¼ cup red bell pepper diced

½ - ¾ cup mushrooms sliced

½ cup cheese grated

Butter softened

Directions

Cut the top off of the bread creating a “bowl”. Save the top.

Hollow out the bread leaving ¾ of an inch on the sides and bottom of the loaf.

Thinly coat the inside of the top and bottom of the bread with softened butter.

Set aside until later.

Pan fry potatoes in butter or olive oil until well browned.

Set aside.

In the same pan used to fry potatoes sauté the vegetables in butter or olive oil until done.

Set aside.

Whip eggs and ½ & ½ until frothy.

Scramble eggs until almost done, add vegetables and stir in cheese.

While eggs, etc. are still hot put in the hollowed out bread.

Cover with the top of the bread to seal. Wrap in two layers of aluminum foil. Then wrap in several kitchen tea towels to keep warm.

When you get to your destination, open your package and slice in wedges using a serrated knife. Enjoy!
